Let’s Bake Together: Chocolate Pancakes (and Brownie Bites!)

    As the old adage goes, breakfast is the most important meal of the day. Since I’m in love with food, I’m always looking for new recipes to try. When GoodSam sent me their mix for Cacao Pancakes, I knew I had to give them a taste and let me tell you, they did not disappoint. 

    For starters, I love that you can add protein to the mix, incorporating greek yogurt. Having a sweet tooth, it’s fun to have chocolate pancakes that I don’t feel guilty about. The mix is keto friendly, vegan, and made with almond flour. There is no added sugar, but if you want yours a little sweeter, add a tablespoon or two of maple syrup to the finished pancakes. 

    The recipe is super easy to follow and requires only a few kitchen staples. Just add eggs, your choice of milk and either cream cheese or yogurt. 

    Since I got several great products from the brand, I also whipped up a batch of brownie bites, using GoodSam mini dark chocolate chips. The recipe was from Elizabeth Waterson, a self-proclaimed chocolate addict and recipe developer.

    These were pretty straightforward as well, but required a few more steps than the pancakes. These would be a great bite size pick-me-up and perfect for a get together. The only hiccup was taking them out of the pan. Even though I sprayed it liberally, the brownies fell apart as I tried to un-mold them. I would recommend letting them cool for about 20 mins or so before taking them out of the muffin tins. The crumbling wasn’t a big deal, though–these brownie bites were still delicious! I made 12 mini bites and had plenty of batter for another batch. 

    If you want a sweet treat without the work, GoodSam does have a brownie mix that you can throw together with just a few simple steps.
