ICL Food Specialties announced the launch of a ROVITARIS, a clean label binding technology solution for plant-based meat and seafood applications. The protein system can replace most chemically processed binders in plant-based and seafood formulations without compromising on taste and texture, the company says. The ingredient is designed with Rubi Protein RuBisCO, and is derived from sustainably grown lemna. The launch is part of an agreement between Plantible and ICL. The new advancement can enhance nutritional qualities, low allergenicity, and superior binding and gelling properties.
