Ingredients:
- 1 1/2 cups organic yellow cornmeal
- 1 1/4 cups organic unbleached white flour
- 2 tsp non-aluminum baking powder
- 1 tsp EDEN Sea Salt
- 1 1/2 cups EDENSOY Original or EDENSOY Unsweetened
- 1 Tbsp EDEN Apple Cider Vinegar
- 1/2 cup organic maple syrup
- 1/4 cup EDEN Safflower Oil
Preheat oven to 350°. Oil an 8" x 8" square or 8" round cake pan. In a medium bowl, combine cornmeal, flour, baking powder, and sea salt. In a separate bowl, combine EDENSOY, cider vinegar, maple syrup and oil. Stir into flour mixture. Bake 35 minutes, until a cake tester comes out clean.
