Haifa Bay, Israel—Gadot Biochemical Industries is positioning their mineral line for the growing vegan market, according to a press release.

Cheese and meat alternatives are typically produced by blending individual constituents and proteins. Gadot’s calcium citrate, calcium phosphate, tri sodium citrate, and magnesium phosphate serve as firming agent regulators, the press release says, and enable manufacturers to control the texture and hardness of the product.

The press release cites a report from Packaged Facts which found that vegan dairy and egg products will climb from $4.3 billion in 2020 to $5.2 billion. “This creates the need for calcium and other minerals, such as those offered by Gadot, for proper formulation,” said Ohad Cohen, CEO of Gadot.

A suitable mineral source will assist with the product’s taste, texture, health benefits, and stability in processing conditions, the press release states.

“As demand for plant-based meat and cheese alternatives continues to rise, texture and firmness remain critical for manufacturers to achieve,” Cohen added. “Brands tend to have only one opportunity at pleasing the consumer’s discerning palate when there’s so much new competition sprouting up.”
